The date of enlistment is the date the he was recruited by the person who was raising the company/regiment. The date of muster is the date that the full complete regiment was mustered into service of the Confederacy.
I am more familiar with Union records so let me explain how this worked in the North. The governor of a state issued a commission to an individual(s) to raise a regiment within the state. As the prospective soldiers signed up they were enrolled. When the recruiter(s) had enough men for a regiment (usally 10 companies of about 100 to 125 men per company), the regiment would go to the central processing center for the state where the regiment/company was mustered into the service of the Union by representatives of the U. S. Army. I'm sure it was similar in the South.
Musters were taken periodically for pay purposes. If a soldier was mustered into service between musters, his muster card very likely would carry the beginning and end date of the muster period, regardless of the date he was actually mustered into service.
