I searched the Irish Family History Foundation's database. There are 1066 B rcds for 32 variants of this name. Most of the rcds are in the Co. of Antrim; the others are mainly within the old bounderies of the Province of Ulster. It looks like the dominant spelling of the name became Darragh. Because of the tight cluster of the names in this region, it may have originated in Scotland.
There were no "Irvings" at any time. The closest match was an "Irwin Alexander" which fits exactly into your timeline of 1868. Registration was civil starting in 1864. The B rcd should give you the names of his parents.
